Our bagels use simple (real) ingredients, are cold proof fermented, sweet-water boiled and baking-steel steam-baked creating the perfect environment for a really amazing bagel!

At TOB’s we believe in the classic real bagel. To be a classic bagel it has to be hand rolled, cold proofed, sweet-water boiled, and steam baked to create that amazing crispy exterior that surrounds a dreamy dense-yet-somehow-pillowy interior. Time is the great differentiator between a “meh” unremarkable bagel and a “Whuuuh just happened ?!” double-take bagel experience.
Culinary magic happens when water-meets- flour.
It’s that timeless romance story we’ve all come to love!
We use flour that naturally comes packed with ready-to-activate enzymes that just need time to convert starches into sugars. Those sugars are then feasted on by the resident yeasts. When those two are put together into a cold environment for 24-48 hours culinary alchemy happens!
The result is a bagel whose deliciously crispy exterior and pillowy-but-somehow-dense interior makes your taste buds want to go topless!
